INTRODUCTION

Ethone, chemically 1-(p-methoxyphenyl)-1-penten-3-one, is a flavor and fragrance ingredient. Available in white to yellow crystalline powder form, it bears sweet and anisolic taste.

Manufacture
The F&F compound is manufactured by ambient saturation of mixture of anisaldehyde and ethyl vinyl ketone with HCl.
Alternatively, it is produced by reaction of methyl iodide with alpha-methyl-alpha-(4-hydroxy)benzylidene acetone.
